Ferrous bisglycinate is an iron amino acid chelate, used as a source of dietary iron. It is formed by the reaction of ferrous iron with two molecules of the amino acid glycine by a covalent bond in a process called chelation.

BIOCHEMICAL ASPECTS

Ferrous bisglycinate consists of one molecule of ferrous iron covalently bound to two molecules of glycine. The iron is bound to the carboxyl group and the alpha-amino group of glycine by coordinate covalent bonds, to form two heterocyclic rings.

This 1: 2 metal to ligand ratio restricts reaction with dietary inhibitors of iron absorption, neutralizes the valence of the ferrous iron, and protects gastrointestinal surfaces from irritation by the iron.

This structure makes ferrous bisglycinate an ideal fortificant for foods with a high content of absorption inhibitors such as phytate. Data from human and animal studies indicate that ferrous iron is readily bioavailable with fewer side effects than the more commonly used iron salts. It is a highly stable chelate that can be added to most foods.
